Banana Bread (low fat, no sugar added)

SERVINGS | 12 slices

Ingredients
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup unsweetened applesauce
Sugar substitute to equal 1 cup sugar
2 eggs (or 1/2 cup egg substitute)
1 cup mashed bananas
2 tablespoons milk

Instructions
Preheat oven 350 degrees F.

Spray 9x5x3 inch loaf pan with nonstick spray.

Mix all ingredients together thoroughly.

Spread into prepared pan, bake 45-50minutes; until toothpick inserted in center comes out clean.

Cool 5 minutes, loosen sides; remove from pan let cool completely before slicing.

Oat Bran Date Bread

Ingredients
1 cup oat bran
1 cup chopped dates
1/3 cup non-fat powdered milk
1/2 cup molasses
3/4 cup hot water
1 tablespoon butter
1/4 cup egg substitute
1/2 cup flour
1/2 cup whole-wheat flour
1 tablespoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground ginger

Instructions
Preheat oven 350 degrees F.

Spray 9x5x3 inch loaf pan with nonstick spray.

Mix oat bran, dates,dry milk, molasses, hot water, butter and egg substitute in large bowl; Stir in remaining ingredients.

Spread into prepared pan, bake 30-40 minutes; until toothpick inserted in center comes out clean.

Cool 5 minutes, loosen sides; remove from pan let cool completely before slicing.

Pumpkin Scones with Pumpkin Butter

SERVINGS | Makes 8 scones
SOURCE: Recipe was modified from this one to lower fat and increase fiber

Ingredients
1 cup white flour
1 cup whole wheat flour
1/2 cup brown sugar
1/4 tsp ground ginger
1/2 tsp nutmeg *
1/4 tsp allspice
1/2 tsp ground cinnamon
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup Brummel & Brown
1/3 cup buttermilk (or use 1/3 cup skim milk & 1 tsp lemon juice)
1 tsp lemon juice
1/2 cup pumpkin, canned
1 tsp vanilla extract

Instructions
Mix together flour, sugar, spices, baking powder, baking soda and salt in a large bowl. Cut in Brummel & Brown. Add buttermilk, pumpkin and vanilla to the dry ingredients and mix until the dough comes together.

Transfer to a lightly floured surface and knead gently just a few times. Shape into a circle about 1-2 inches thick, and cut into 8 equal wedges (like a pie).

Bake at 375° for 20 minutes, or until a toothpick comes out clean. Serve with pumpkin spice butter (below)


Pumpkin Spice Butter
1/4 cup Brummel & Brown
1/4 cup pumpkin, canned
1 tbsp brown sugar
1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp allspice

Combine all and mix till creamy.


*When I first made these, I accidently added 2 tsp of nutmeg instead of just 1/2 tsp. They tasted terrific that way, so feel free to use that as a modification if you want to mix up the spices a bit.

Pumpkin Bread

Ingredients
3 cups sugar
1 cup oil
4 eggs
1 can (1 lb) pumpkin
2/3 cup water
3 1/2 cup flour
2 teaspoons baking soda
2 teaspoons salt
1 teaspoon baking powder
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon cloves

Instructions
Cream sugar and oil together. Add the eggs and pumpkin; mix well. Stir in all dry ingredients alternately with water.

Pour into two well-greased and floured 9"x5" loaf pans . Bake at 350 degrees for 1 1/2 hour until done.

Let stand 10 minutes, then remove from pans and cool.
